These beef tacos are a fun and healthy way to get fussy little eaters involved with their food. The different toppings mean that they can pick and choose what they put into their tortilla. Hopefully you can persuade them to choose at least one of the colourful veggie sides, but if not don’t worry we’ve sneaked some into the beef filling!

Ingredients

For the filling:

  • 500 g quality minced beef (you can replace with lamb or pork mince if you prefer)
  • 2 cloves of garlic, crushed
  • 1 onion grated
  • 1 carrot grated
  • 2 mushrooms, finely diced
  • 1 teaspoon mild paprika
  • 1 teaspoon cumin
  • 250 ml organic beef stock
  • 2 tablespoons passata
  • 2-3 tablespoons olive oil
  • Pinch of salt and pepper

For the sides:

  • 1 carrot grated
  • 6 Little Gem lettuce leaves chopped
  • 4 vine tomatoes chopped
  • 100g grated cheddar cheese
  • 100g sour cream

For the tortilla:

  • Soft flour tortillas

 

Instructions

  1. Prepare the ingredients for the filling. Grate the onion and carrot. Mince the garlic and dice the mushrooms.
  2. Then heat 2-3 tablespoons olive oil in a large frying pan. Add the grated onion and crushed garlic and stir for a few minutes until soft and slightly golden. Then add the mushrooms and carrots, and cook for a few more minutes until soft.
  3. In a separate pan add some olive oil and the minced beef. Stir continuously until brown and then add to the pan with the vegetables. Add paprika and cumin, the passata along with a pinch of salt and pepper and stir. Add 250 ml beef stock to the pan and leave to simmer for 20 minutes
  4. You’ll know it’s ready when the stock has reduced and you are left with a moist mince filling.
  5. Spoon the mixture into a bowl, ready for serving.
  6. While the beef filling is simmering, prepare the sides: chopped lettuce, chopped tomatoes, grated carrot, grated cheddar cheese and sour cream (or any other sides that you fancy) and put into separate bowls. Warm the flour tortillas in the oven for 5 minutes, then lay them out on a platter next to the sides.
  7. Set the filling down alongside the warm tortillas and chopped sides.
  8. Pick a tortilla, add the filling and choose your toppings to make a delicious taco.
