These amazing chocolate and beetroot bliss balls are great for little afternoon pick me ups for the kids. They’re also a tasty coffee accompaniment for tired mamas. Red beets are rich in healthy vitamins and minerals and have so many antioxidants that they have been ranked amongst the top 10 antioxidant vegetables! We’ve added in pumpkin seeds, dark chocolate and almond butter along with a sprinkle of  shredded coconut to make these bliss balls completely irresistible.

Free from refined sugar, these energy balls are sweetened naturally with heart-healthy dates and maple syrup. As we’re using oats, they’re also naturally gluten free! So you can enjoy them guilt free and without the nasty sugar highs (and lows).

They also couldn’t be easier to make. You just pop the ingredients into a blender, give it a buzz and your bliss ball ‘dough’ is ready. You can then get the kids to help you roll these energy bites into balls and dip them in the shredded coconut. Done in under 10 minutes they can then be kept in the fridge, ready for your next afternoon snack or mid morning coffee.

Ingredients

  • 2 cups oats (180 grams)
  • ½ cup pumpkin seeds
  • 75 grams of cooked beetroot, chopped
  • 50 grams of chopped dates (3 dates)
  • ½ cup of maple syrup
  • ¼ cup of almond butter
  • 1 tablespoon of cocoa powder, dark
  • ½ cup of dark chocolate chips
  • 100 grams shredded coconut for rolling

 

Method

  1. Cook and grate the beetroot and add to a food processor.
  2. Add the oats and pumpkin seeds. Pulse for about 30 seconds.
  3. Add the maple syrup and chopped dates and continue blending.
  4. Scrape down the sides of your food processor and add the almond butter, cocoa powder and chocolate chips. Pulse until everything is well combined.
  5. Scoop the raw dough out into a bowl using a spoon and roll into balls slightly smaller than a golf ball.
  6. Roll in desiccated coconut (optional)
  7. Enjoy these delicious bliss balls!

  1. Cook (or use cooked) beetroot, chop and add to a food processor.
  2. Add the oats and pumpkin seeds. Pulse for about 30 seconds.
  3. Add the maple syrup and chopped dates and continue blending.
  4. Scrape down the sides of your food processor and add the almond butter, cocoa powder and chocolate chips. Pulse until everything is well combined.
