Where do tater tots come from?

Tater tots were invented in 1953 when the founders of Ore-Ida were trying to find what to do with the leftover pieces of cut up potatoes. Nowadays Americans consume over 70 million pounds of Tots per year. That’s a whole lot of tater tots!

And as for broccoli…

Broccoli is a magic vegetable in our humble opinion. Packed with vitamins and nutrients, just 1 cup of broccoli provides 135% of our recommended daily allowance for Vitamin C, a powerful antioxidant. The same portion gives us 116% of our daily requirement for Vitamin K. It also has folate, calcium, iron, magnesium, phosphorus, potassium, zinc, copper, manganese and selenium. Could we ask for more from one vegetable?

Some children love broccoli, and others…not so much. They may avoid it at all costs and the most we can get them to do is to lick a small part of it at mealtimes.

These broccoli tots may have broccoli in them but the taste is not overpowering. The potato gives the broccoli tots a creamy texture, while the cheese adds some extra flavour. The oat flour is used to tie the mixture together but it is also a light flavour that complements the other ingredients.

Tasty and delicious, kids love these broccoli tots!

Ingredients:

  • 300 grams of potatoes, peeled and roughly chopped
  • 150 grams of broccoli, chopped and stems removed
  • 100 grams of cheddar cheese, grated
  • 1 egg lightly beaten
  • 2 tablespoons of oat flour
  • 2 tablespoons of olive oil

Method:

  1. Peel and chop the potatoes and roughly chop the broccoli.
  2. In a medium sized saucepan boil the potatoes for 5 minutes.
  3. Add the broccoli to the pan with the potatoes and boil everything for 10 more minutes until soft.
  4. Drain the potatoes and broccoli and mash them well with a fork.
  5. Stir in the cheese, egg and oat flour, and mix it all well.
  6. Heat the olive in a large fry pan until sizzling.
  7. Dust your hands with oat flour and form the mixture into cylindrical tater tot shapes.
  8. Drop the broccoli tots into the oil and cook for about 2-3 minutes on each side.
  9. Remove them from the pan and serve hot.

First wash and peel your potatoes.

Roughly chop your potato and broccoli, removing the woody stems from the broccoli.

Bring a saucepan of salted water to a boil and put your potatoes in.

Boil them for about 5 minutes.

Add your broccoli to the pan.

Continue boiling the broccoli and potatoes for another 10 minutes.

You want the potatoes and broccoli to be soft and easy to mash when you make the broccoli tot mix.

Drain your potatoes and broccoli and mash them gently with a fork.

Give the mix a good stir.

Heat the olive oil in a saucepan until sizzling.
