Ingredients

  • 2 parsnips
  • 1 tablespoon fresh thyme leaves
  • 4 tablespoons olive oil
  • Salt and pepper

Instructions

  1. Preheat the oven to 180 degrees Celsius.
  2. Wash and peel the parsnips, cut the top and end off.
  3. Take a vegetable peeler and carefully peel thin slivers of parsnip starting from the thick end. Place in a bowl.
  4. Add the olive oil, thyme leaves, salt and freshly milled pepper. Mix well until each parsnip sliver is covered in oil.
  5. Place on a large baking tray. Spread them out so that each sliver has its own space.
  6. Cook for 25 minutes or until golden. Keep an eye on them as they brown quickly.
  7. Remove from the oven and let them cool a little.
  8. Enjoy!
