Upside down cakes are just so much fun! What better way to finish off a cake than to take it out of the oven and flip it over onto a plate. Kids will go wild at this unique chance to turn our careful baking upside down without a care in the world. Our apple upside down cake is made with a delicious apple caramel topping. It has all the flavour of apple pie in a cake, and makes for a great sticky sweet tea time treat.

We love apples

Especially apples baked in cinnamon and caramel and fanned out on top of a moist cake! We chose to use pink lady apples for their sweetness, but you can use any apples you prefer.

We start by creating the caramel by heating the butter, sugar and cinnamon in a saucepan. Caramel is sensitive to heat so you don’t want to overdo it on the heat setting. Keep it at a low to medium heat and stir until it’s combined. When it’s ready we spread the caramel over the cake tin base and fan out the apple slices on top of it.

We then move on to create the cake which is made by first mixing together the dry ingredients, the flour, baking soda, salt and cinnamon. We then slowly combine the wet ingredients in a separate bowl. The butter and sugar go first and they are whisked together for a few minutes before the eggs, milk and vanilla extract are gradually added. We then combine the wet and dry ingredients to make our cake batter. We pour the cake mix into the cake tin over the apples and bake until the kitchen smells of cinnamon apple pie!

Ingredients

Apple caramel topping:

  • ¼ cup butter (60 grams)
  • ½ cup light brown sugar (100 grams)
  • ½ teaspoon ground cinnamon
  • 3 pink lady apples, peeled and thinly sliced

Cake:

  • 1½ cups all-purpose flour (180 grams)
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ½ cup softened butter (115 grams)
  • 2/3 cup granulated sugar (130 grams)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk  (120 ml)

Instructions

  1. Preheat the oven to 180 degrees.
  2. Grease a round cake tin with butter or oil spray. We used one with a 20 cm diameter.

Caramel apple topping:

  1. In a medium sized saucepan, stir together the butter, brown sugar and cinnamon over medium heat.
  2. When everything has combined, remove from the heat and pour it into the cake tin. It should be spread evenly across the bottom of the cake tin.
  3. Thinly slice the apples and arrange them over the caramel base in a fan shape.

Cake:

  1. In a large mixing bowl combine the flour, baking powder, cinnamon and salt and mix together.
  2. In a separate bowl, beat the butter and sugar together until smooth with an electric mixer.
  3. Add the eggs.
  4. Add the vanilla and milk and mix until well combined.
  5. Add the dry ingredients and mix together to finalise the cake mixture.
  6. Pour the cake mixture into the cake tin, on top of the caramel and apple layers.
  7. Bake in centre of the oven for 35-40 minutes, or until cooked through.
  8. Allow the cake to cool in the cake tin for 10 minutes.
  9. Then the fun part! Place a plate over the cake tin and flip the cake over in one swift motion onto the serving plate.
  10. Slice and enjoy!

Peel and slice your apples and set aside.

We used pink lady apples as we love their sweetness but you may prefer another variety of apples so feel free to use those.

Start making your caramel topping for the cake.

Mix together your butter (the quantity for the topping) with your brown sugar and cinnamon in a saucepan.

Heat it over medium heat until it’s sticky and warm.

Take care not to have the heat on too high or the caramel will ruin.

Spread your caramel sauce over the bottom of the pan.

Tilt the pan back and forth so that the base of the pan is evenly covered with the caramel.

Arrange your apple slices in a fan shape on top of the caramel.

Don’t be afraid to overlap the apple slices, it’s all about the apples with this cake.

Whisk together your flour, baking powder, salt and cinnamon.

In a separate bowl mix your sugar and butter together.

Beat with an electric mixer until smooth.

Add the eggs in. Add the vanilla and milk bit by bit.

Keep beating everything until it’s all combined.

Pour your wet ingredients into your dry ingredients.

Stir it all together until a batter forms.

Spoon your batter into the cake tin on top of your fanned out apple slices.

Put your cake in the oven to cook for about 35 minutes or until cooked through.

Let it cool in the pan for 10 minutes.

Now flip the cake over onto your serving plate
