  • 1 stick celery, finely chopped
  • 1 carrot, peeled and grated
  • 1 Teaspoon parsley leaves, chopped
  • 1 Teaspoon thyme leaves, chopped
  • 1 Tablespoon raisins, finely chopped
  • 30mls no salt chicken stock – see our own stock recipe
  • 2 Tablespoons of oat flour (or finely ground oats)
  • 1 Tablespoon olive oil

Instructions

  1. Heat the oven to 180 degrees Celsius.
  2. Grease a baking dish with olive oil or oil spray.
  3. Chop the celery. Peel and grate the onion and carrot.
  4. Heat 1 Tablespoon olive oil in a frying pan and saute the onion, carrot and celery for a few minutes until soft and golden.
  5. When they are cooked and slightly browned, remove and place in a bowl.
  6. Mix in the chopped parsley and thyme, the chopped raisins and the chicken stock.
  7. Add 2 tablespoons of oat flour (or finely ground oats) and mix together.
  8. Start forming the mixture into patties. Spoon off the mixture into a baking dish and pat it down to form it into circles. Or do what we did and place a biscuit cutter in the baking dish. Fill it with stuffing, and compact it with a spoon. Then remove the biscuit cutter to leave a nice round stuffing patty.
  9. Continue until all the mixture is in the baking tray.
  10. Cook for 15-20 minutes or until golden.
  11. Remove, cool and let baby enjoy!
