Frozen watermelon kebabs with a drizzle of honey and sprinkle of coconut. The perfect summer snack for kids

Hot summer days call for a cool refreshing snack! And what’s better than little watermelon balls, frozen to make mini ice lolly kebabs?

We’ve drizzled these frozen watermelon kebabs with a little honey and sprinkled with coconut flakes to make them absolutely irresistible.

And they only take 5 minutes to make. So enjoy!

Is watermelon good for you?

Watermelon is low in calories and high in water, but it’s also great for your health!

It contains Vitamins C and A which are good for your hair and skin. As well as Potassium, Magnesium and Vitamins B1, B5 and B6. And it has Lycopene, a powerful antioxidant with numerous health benefits.

So it’s not just a refreshing fruit with high water content but a healthy little snack to enjoy too!

Can you freeze watermelon?

Watermelon can be frozen so that you can enjoy it for longer so these watermelon balls can last in the freezer.

Make your watermelon kebabs by scooping out balls of the watermelon. Remove any seeds, thread them onto sticks. They can be stored in an air tight container for up to 3 months.

Ingredients:

  • 1 small watermelon
  • 100 grams coconut flakes
  • Drizzle honey (optional)

Equipment

  • Wooden skewers
  • Melon baller

 

Instructions

  1. Cut your watermelon in half.
  2. Take a melon baller and carefully scoop out 15 watermelon balls. We have allowed 5 balls per watermelon kebab. If you want to make more then just adjust accordingly.
  3. Take 5 watermelon balls and thread them onto one of your wooden skewers. Place them in a tray or storage container, so they’re ready to go in the freezer. Repeat for your remaining skewers.
  4. Add a little drizzle of honey over the watermelon kebabs.
  5. Sprinkle them with coconut flakes until the watermelon balls are coated.
  6. Freeze them for several hours or overnight.
  7. When you’re ready for your snack take them out a few minutes beforehand so that they thaw a little and enjoy!

Notes:

We recommend giving these to children over 3 years of age only. For younger children the balls can be halved or quartered to make them safer and easier to eat.

The watermelon balls can be quite hard when they come out of the freezer so give them a few minutes to de-thaw before serving.

Halve your watermelon

Cut your watermelon in half.

Take your melon baller and start scooping out small round watermelon balls.

Allow 5 balls for each watermelon kebab you want to make.

Make your watermelon kebab

Thread each watermelon ball onto your wooden stick. Make sure it passes through the centre of the watermelon ball.

We put 5 balls for each stick.

Add a drizzle of honey

Carefully drizzle a little honey over the top of your watermelon kebabs.

Sprinkle with coconut flakes

Using a spoon or your fingers, sprinkle on coconut flakes so that each ball is coated in a light layer of them.

Freeze and they’re ready to enjoy

After a few hours in the freezer these watermelon kebabs are ready to enjoy!

We recommend leaving them out of the freezer or a few minutes before serving as they can be quite hard at first.
