Bring a taste of Greece into your home with these traditional courgette fritters. Locally known as ‘kolokithokeftedes’ they make the perfect veggie burger for adults and are soft and easy to chew for little ones. We’ve made these with lovely aromatic herbs, feta cheese and a pinch of cumin. They go amazingly with our yoghurt and honey dip. Ours vanished in no-time so we hope yours go down just as well!

Ingredients

For the courgette fritters:

  • 500g grated courgette (4 medium or 3 large courgettes)
  • 2 spring onions – green and white parts sliced
  • 1 bunch mint leaves (10g)
  • 1 bunch dill (10g)
  • 1 bunch coriander leaves (10g)
  • 2 tablespoons squeezed lemon juice
  • 1 heaped teaspoon ground cumin
  • 200g feta cheese
  • 2 eggs
  • 80g all purpose flour
  • 2-3 tablespoons olive oil
  • 1tsp salt (optional)

For the dip:

  • 150g natural Greek yoghurt
  • 1 tablespoon honey
  • 1 teaspoon cumin

Instructions

  1. Peel and grate the courgettes.
  2. If you are adding salt, sprinkle a teaspoon of salt over the grated courgette and mix in quickly with your hands. (The salt helps extract more water from the courgette, making the fritters softer, but you can still make delicious fritters without salt if you prefer to avoid it.)
  3. Set the grated courgettes to one side for 10 minutes while you prepare the rest of the ingredients
  4. In a blender add the dill, coriander and mint leaves, the spring onions both white and green parts roughly chopped, the 2 eggs and the feta cheese. Blend just enough until smooth or in small pieces.
  5. Return to the grated courgette. Place it in a kitchen towel. Gather the ends and squeeze the mixture until water comes out. Strain into a kitchen bowl and get as much water out as you can.
  6. In a bowl mix the strained, grated courgette and the blended ingredients. Add the cumin, lemon juice and flour.
  7. Mix until just combined.
  8. Heat 2-3 tablespoons of olive oil in a pan, on a medium heat.
  9. Spoon off the mixture into the pan. Push down on the courgette mixture to make it flat and shape into little circles with the spoon to make them regular.
  10. Lower the heat if necessary. Then when brown flip the courgette fritters and cook on the other side.
  11. Remove from the pan and lay on a plate lined with paper towel to soak up any excess oil.
  12. Make the yoghurt and honey dip by adding the ingredients together and stirring.
