Winter is the perfect time to indulge in a slow cooker chicken stew. This recipe only requires a little chopping, and the oven does the rest. You could also use a slow cooker on high for 4 hours, or on low for 8 hours if you want to get it started before you leave for work. Come dinnertime you’ll have a warming and tasty family meal.

Slow cooking brings out the flavour in food. It tenderises the meat as well leaving you with a bowl full of juicy chicken pieces, soft vegetables in a tasty stew sauce. It also helps that you can get on with other things while your dinner cooks itself!

What ingredients go into a chicken stew?

Our chicken stew is full of root vegetables, which are in season in winter. Root vegetables grow underground at the base of the plant. Essentially they store all of the nutrients that the plant needs to stay alive and sustain growth. So, they are real nutrition superheros.

Our stew has parsnips, sweet potatoes, and carrots. We’ve also added more vegetables with some leeks, celery, potatoes and green beans. So…you can be sure that everyone in your family is getting more than their nutritional requirements for the whole day in one bowl of our slow cooker stew.

How to cook a chicken stew

We recommend coating the pieces of chicken and vegetables in flour and browning them first. This can help thicken the stew sauce and release the flavours of each of the ingredients. After browning you can simply add the rest of the ingredients along with the vegetable stock and pop in the oven or slow cooker.

Seasoning for a chicken stew

We have kept our seasoning simple by adding some fresh thyme which has such a great subtle flavour. However you can add more herbs if you like, including oregano, parsley, basil or coriander. A bay leave can always be added as well and removed before serving.

Ingredients

  • 8 boneless chicken thighs
  • 2 medium leeks
  • 2 carrots
  • 2 celery sticks
  • 2 garlic cloves, crushed
  • 6 sprigs of fresh thyme – leaves only
  • 50 grams flour
  • 2 tablespoons olive oil
  • 2 large sweet potatoes (400 grams)
  • 2 parsnips
  • 4 new potatoes (200 grams)
  • 1 cup green beans (150 grams)
  • 600 ml organic vegetable stock

 

Instructions

  1. Chop the chicken thighs into pieces about 3 x 3cm.
  2. Chop the vegetables the: carrots, celery, leeks, green beans sweet potatoes, new potatoes and parsnips into similar size pieces. Crush the garlic cloves.
  3. In a frying pan heat 1 tablespoon olive oil. Coat the chopped chicken thigh pieces in flour and brown them. Remove onto a plate and set aside.
  4. In the same pan, add the garlic, leeks, carrots, celery and thyme leaves and cook until brown.
  5. Roll the pieces of sweet potatoes, parsnips, and new potatoes around in the flour until coated. Add to the frying pan and cook for a few minutes.
  6. Return the chicken pieces to the pan and add the thyme leaves. Sprinkle on the rest of the flour.
  7. Add the stock and green beans and simmer for 1 minute.
  8. Cover and cook for 1 hour on a low heat on the hob, or in the oven. If you’re using a slow cooker cook on high setting for 4 hours or on a low setting for 8 hours.
  9. Serve with steamed broccoli.

Chop the carrots, leeks, celery and crush the garlic.

Remove the thyme leaves from the stalks and set everything aside.

Now put a tablespoon of olive oil into a large fry pan. Sprinkle the chicken thighs with flour and fry until browned.

If you are planning to use a Dutch Oven, slow cooker or any other hob to oven kind of pan, skip the fry pan, start the whole stew in the pan that you will cook it in.

Otherwise, we’ll transfer to an oven dish and cover it in foil later on.

Add the carrots, celery, leeks, garlic and thyme to the pan and saute for another 4-5 minutes.

Roll around your sweet potatoes, parsnips and potatoes in flour until coated and add them to the pan.

This is what will make your stew thick.

Turn everything over with a spoon until the contents of the pan are well coated in flour.

Sprinkle the remaining flour over the mixture.

Now add the vegetable stock and green beans.

Make sure that everything is well coated and that the flour is evenly distributed.

Simmer for about 5 minutes with the lid off.

If you are using a Dutch Oven or slow cooker, put the lid on your pan, and pop the stew into the oven.

If you are using a fry pan, then simply transfer the stew to an oven dish and cover the dish with foil.
