Unicorns have taken kids’ party themes, bags and clothes by storm with their brightly coloured manes.

So we thought why not create unicorn popsicles too! Ours are made with 100% natural ingredients, so no food dyes included. Fresh fruits, honey and coconut milk are all they need!

How to make unicorn popsicles?

Unicorn popsicles are made in three layers.

First we create the purple layer by combining our blackberries with coconut milk and honey.

We let that set in the freezer for about 2 hours. Then we add in our pink layer which is made with our raspberries, coconut milk and honey.

After this has set in the freezer as well, we add our final orange layer in, our cantaloupe melon with coconut milk and honey.

By creating these unicorn popsicles in stages we end up with 3 beautiful and brightly coloured layers that kids will love!

Ingredients

Altogether you will need:

  • 10 grams blackberries (about 2)
  • 50 grams raspberries (about 8)
  • 100 grams cantaloupe melon
  • 500 mls coconut milk
  • 50 mls honey

This is divided into 3 layers:

 

Purple layer:

  • 2 large blackberries (10 grams)
  • 10 tablespoons coconut milk (180 mls)
  • 1 teaspoon honey

Pink layer:

  • 8 raspberries (50 grams)
  • 10 tablespoons coconut milk (180 mls)
  • 2 ½ teaspoons honey

Orange layer:

  • 100 grams cantaloupe
  • 8 tablespoons coconut milk (140 mls)
  • 1 tablespoon honey

 

Instructions

Some tips before getting started:

  • We recommend giving your coconut milk a quick stir before beginning. This is to prevent the cream from gathering at the top.
  • When you blend each layer, the honey can stick to the base of the blender so we recommend spooning it over the fruit before mixing, so that it gets evenly blended.
  1. Create the purple layer by placing all the ingredients in a blender: the blackberries, coconut milk and honey. Pass the mixture through a sieve and pour into your ice lolly moulds until they are ⅓ full. Freeze for 2 hours or until firm.
  2. Create the pink layer by placing all the ingredients in a blender: the raspberries, coconut milk and honey. Pass the mixture through a sieve. Remove the ice lolly moulds from the freezer and pour the pink layer into them until they are ⅔ full. Freeze for another 2 hours or until the second layer is firm too.
  3. Create the orange layer by placing all the ingredients in a blender: the cantaloupe melon, coconut milk and honey. Remove the firm ice lolly moulds from the freezer and pour the orange layer into them until they are full.
  4. Add in the sticks and cover them. Freeze for 2 hours or overnight and enjoy!

Make the purple layer

Place the ingredients for the purple layer in a blender:

  • 2 large blackberries (10 grams)
  • 10 tablespoons coconut milk (180 mls)
  • 1 teaspoon honey

Mix until smooth.

Sieve and pour into ice lolly moulds

If there are a lot of seeds we recommend passing it through a sieve.

Pour the mixture into the ice lolly moulds until they’re about a third full. Place in the freezer for 2 hours or until firm. Then you can add the next layer.

To make the pink layer

Place the ingredients for the pink layer in a blender:

  • 8 raspberries (50 grams)
  • 10 tablespoons coconut milk (180 mls)
  • 2 ½ teaspoons honey

Mix until smooth.

Sieve and spoon into ice lolly moulds

If there are a lot of seeds we recommend passing it through a sieve.

Pour the mixture into the ice lolly moulds until they’re about two thirds full (together with the purple layer).

Place in the freezer for 2 hours or until firm. Then you can add the final layer.

To make the orange layer:

Place these ingredients into a blender:

  • 100 grams cantaloupe
  • 8 tablespoons coconut milk (140 mls)
  • 1 tablespoon honey

If you wish to you can pass the mixture through a sieve to make it smoother but this is optional.

Spoon the final layer into the ice lolly moulds until it reaches the top. Add in your lolly sticks, cover and freeze one last time for 2 hours or overnight.

Wriggle the ice lollies free

When they’re frozen you can remove the ice lollies from the freezer. Warm them with your hands for a moment and wriggle the ice lollies free from the moulds.

They should come out in one clean movement.
