Oatie chocolate chip bars

For all those chocolate chip cookie lovers, we give you these oatmeal chocolate chip bars. No mixer required these rich, chewy bars are full of oats and gooey chocolate chips.

Ingredients

  • 1 cup oat flour gluten free (90 grams)
  • 4 cups jumbo rolled oats gluten free (360 grams)
  • 1 cup milk chocolate chips
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 100 grams unsalted butter
  • 1 cup maple syrup
  • 2 eggs
  • 1 tsp vanilla extract

Instructions

  • Preheat the oven to 180℃ and grease a large baking pan about 9 x 12 inches or cover with grease proof parchment paper. You can use a smaller pan for a thicker bar, just make sure you increase the cooking time slightly.
  • Add the oat flour, rolled oats, baking powder and cinnamon to a large mixing bowl and mix together.
  • In a separate bowl put the softened butter and maple syrup. Whisk together.
  • Add the eggs to the butter and maple syrup one at a time. Then stir in the vanilla extract.
  • Add the dry ingredients from step 2 to the bowl and mix until combined.
  • Lastly, gently stir in the chocolate chips.
  • Empty the batter into a baking pan and level it out with the back of a spoon.
  • Bake in a preheated oven for 20-25 minutes until the edges start to go crisp and golden.
  • Allow the oat chocolate chip bake to cool thoroughly before cutting it into bars for serving. Enjoy!
