Frozen strawberry fruit chew bites

These strawberry fruit chew bites are made with fresh strawberries, coconut milk and peanut butter (you can replace this with sunflower seed butter if you are concerned about allergies). Frozen either in a tray and cut into squares, or in shaped ice cube moulds, they are a super summer snack for little ones!

Ingredients

  • 150 grams strawberries
  • 4 tablespoons coconut milk (70 mls)
  • 3 teaspoons honey
  • 2 tablespoons peanut butter

Instructions

  • Blend the strawberries and coconut milk together in a mixer.
  • Add in the honey and peanut butter and blend until smooth.
  • Pour the mixture into a small, shallow rectangular tray or into ice cube moulds or cupcake holders. You want the mixture to be about 1 cm deep.
  • Freeze for 2 hours or overnight and pop them out to enjoy!

Notes

If you're concerned about tree nut allergies, replace the peanut butter with some sunflower seed butter.
