Savoury waffles with aubergine and feta
Try this new take on savoury waffles. With fresh aubergine, chopped parsley and ground feta cheese, they're a creamy and tasty dish for kids as well as being gluten free.
- 1/2 aubergine peeled and cubed
- 1 tbsp parsley leaves
- 15 grams arrowroot powder
- 30 grams feta cheese
- 1 egg
- oil spray
Peel and cube the aubergine. Place the pieces in a saucepan, fill with water and boil for 10-15 minutes.
Drain the aubergine pieces and mash them about a bit with a fork to get the excess water out of them. Get as much as you can out of the aubergine pieces and strain this water off.
Then add the aubergine pieces to a blender with the rest of the ingredients: egg, feta cheese, chopped parsley and arrowroot powder. Blend until smooth.
Prepare the waffle iron. Turn it on a medium heat setting and spray the inside with the oil spray.
Spoon mixture into the waffle iron. Try not to pack too much in, just fill it until it is level with the mould. Using a spoon or fork, gently ease the mixture into the edges of the waffle mould.
Close the waffle iron and wait for a few minutes until it is golden brown.
