Gluten free banana cookies with chewy raisins
These banana oatmeal cookies are perfect for baking at home with little ones. They'll love mashing the banana up and pouring in the oatmeal. Free from refined sugars, the natural sweetness of the banana, raisins and maple syrup gives these cookies all the yumminess and taste of a great cookie, without the nasty sugar highs.
- 175 grams organic oats
- 75 grams oat flour 3/4 cup
- 1 tsp baking powder
- 50 grams butter, softened
- 1 banana ripe
- 120 mls maple syrup 1/2 cup
- 40 grams large raisins 1/4 cup
- pinch salt
Preheat the oven to 180 degrees.
Grease a baking sheet with cooking spray.
In a medium sized bowl, whisk together the oats, oat flour, baking powder, cinnamon, and salt.
In a separate bowl mix together the butter, mashed banana, vanilla and maple syrup.
Pour the dry ingredients into the wet and mix well.
Fold in the raisins.
Using a spoon, drop the cookies onto the greased baking sheet.
Bake for 10-12 minutes, or until golden brown around the edges.
Let them cool on the baking sheet for 10 minutes before removing to a baking rack.
