Sticky chicken skewers with honey and lemon

Ingredients

  • 2 chicken breasts cut into 2cm x 2cm cubes
  • 3 tablespoons of olive oil
  • 2 garlic cloves, crushed
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons of soy sauce
  • 3 tablespoons of honey
  • 1 teaspoon sherry vinegar
  • 1 lemon, cut into thin slices
  • 1 tablespoon sesame seeds

Instructions

  1. Ideally start by soaking the skewers in cold water for about 20 minutes before beginning. This prevents them from burning later on.
  2. Cut the chicken breasts into 2cm x 2cm chunks. Season well with with salt and pepper.
  3. Thread the chicken onto the skewers, about four pieces per skewer.
  4. Whisk together the soy sauce and honey.
  5. If you have time to let the skewers marinate then place them in an oven dish. Pour half the mixture over them, cover the pan with cling film and leave in the fridge to marinate. You can marinate for anything from 20 minutes to overnight. If you don’t have time you can skip this step and move straight onto the cooking.
  6. When you’re ready to cook, heat the oil in a large fry pan and add your crushed garlic and thyme leaves.
  7. Place the chicken skewers in the pan with the half of the marinade mixture. Brown the chicken (in batches) for 2-3 minutes on each side.
  8. Add a teaspoon of sherry vinegar. This deglazes the pan. Simmer until the vinegar’s reduced by half (a few minutes).
  9. Add the other half of the soy sauce and honey mixture. Shake the pan to mix everything up.
  10. Add a good splash of hot water and the lemon slices. Cook until the sauce reduces to a thick and sticky consistency (about 10 minutes). The chicken should be cooked through now.
  11. Transfer to a serving plate and serve with brown rice or warm pitta breads.

Cover the dish with cling film and marinate in the fridge for anything from 20 minutes to overnight. .

If you’re pressed for time then you can skip this step and begin cooking them straight away.

Heat your olive oil in a large fry pan and add your garlic and thyme.

Put your skewers in the pan to brown. Brown them for 2-3 minutes on each side.

Now add a splash of vinegar.

If you don’t have sherry vinegar, use a white wine or similar vinegar.

This will deglaze your pan in preparation for adding the rest of your sauce.

Let everything bubble and reduce for a few minutes.

Pour in the rest of your soy and honey sauce.

Give the pan a good shake to mix everything up.

 

 

Add a splash of hot water and your lemon slices.

Let the mixture simmer for about 10 minutes, turning the skewers occasionally as the sauce thickens.
